Chefs Collaborative is a national network of chefs and members of the food community across the U.S. who promote sustainable cuisine by teaching children, supporting local farmers, educating each other, and inspiring their customers to choose clean, healthy foods.
Of critical importance to Collaborative member chefs is the commitment they make to advancing organic, sustainable agriculture by purchasing locally-grown produce and designing menus around seasonally fresh foods. Supporting local suppliers who practice sustainable farming techniques means contributing to a cleaner environment, better preserved natural resources, and reduced waste. Equally important, it carries an inherent commitment to maintaining the economic and ecological viability of the family farm. Many member chefs – proud and protective of their connections with local farmers – invite their suppliers to their restaurants to help educate patrons about fresh, local vegetables and fruits.
By the same token, Collaborative members hold their suppliers to high standards, asking tough questions about harvesting and fishing techniques, feeds and water resources, and waste disposal practices. For the majority of suppliers, this depth of buyer interest is returned in the form of high-quality service, excellent product, and delivery efficiency and reliability – all of which contribute to higher quality offerings for the restaurant patron. |
